Quick Creamy Salmon Spaghetti

This recipe makes one salmon portion go a long way! The idea for it came from a spaghetti carbonara recipe, where eggs are used to create a creamy, velvety finish, without to use of cream or dairy. It’s quick and easy as well as being a healthy, nutritious meal that the kids love! It’s also easy to substitute the spaghetti for a gluten-free pasta variety and just omit the cheese (or substitute lactose free) to make it completely dairy-free too. The salmon can be poached in advanced and left in the fridge until it’s needed or even substitute for smoked salmon! Mushroom & Thyme Tagliatelle

Open, flat mushrooms are cheap and so full of flavour compared to the button mushrooms we usually buy and when combined with garlic and thyme they really make an excellent meat replacement. Coupling these mushrooms with pasta, makes this recipe the ultimate in frugal family food! The best thing about this recipe is that it will work with any amount of ingredients, just chuck in the amount you have and add a bit more pasta to bulk it out, where necessary, so it’s a great recipe if you are on a budget. We have a herb basket where we grow our own thyme, though dry thyme will also work in this recipe, just add it when you add the mushrooms so that it has time to soften and release it’s flavour. Quick Tuna & Olive Spaghetti

This is one of my emergency, store-cupboard recipes that gets thrown together in the time it takes for the pasta to cook. It’s quick and easy as well as being a healthy, nutritious meal that the kids love! It’s also easy to substitute the spaghetti for a gluten-free pasta variety and just omit the cheese (or substitute lactose free) to make it dairy-free too. One small tin of tuna goes a long way with this recipe and there’s no need for much seasoning as the tuna, olives and parmesan are all a little salty (depending on the variety you use). Halved, cherry tomatoes, stirred in with the spinach are also a nice addition or a crumbling of feta cheese on the top. If I make it for the whole family, the adult portions are topped with sliced spring onion. Here’s the recipe!

The Best Bolognese

Spaghetti Bolognese is usually a winner with kids and our most frequently served dish for playdates! Even the fussiest of eaters seem to like this family favourite and when it’s packed full of veg, it’s a healthy, nourishing dish that’s cheap and easy to prepare. There’s always enough left-over to freeze for a quick meal at a later date, and it’s a base for other great dishes like lasagne, cottage pie and chilli con-carne. Roasted Vegetable Pasta Sauce

Buzymum - Roasted veg pasta sauce is a great way to get them to eat veg without them realising it!

This is a sneaky way to get your kids to eat different vegetables! I use it as a pasta sauce, as a dip for root veg chips or as a base for bolognese. Just whip up a batch and freeze it in 200ml portions, for a cheap, healthy meal in minutes! For this simple recipe, click here.
