Chicken ‘Kinda’ Kiev

This is a really quick and simple, gluten free recipe, based on the chicken Kiev. It uses a mouthwatering garlic and herb butter, but instead of coating in breadcrumbs, simply wrap the chicken in Serrano or Palma ham, making them gluten free. I use chicken thighs for this recipe as they are cheap and the perfect portion size for kids, if preparing it for adults, I would allocate two per portion or use a chicken breast instead.

Ingredients:

  • Chicken thighs, de-boned (Sainsburys sell boneless thighs but it’s even cheaper if you do it yourself!)
  • 1 large garlic clove, crushed
  • 1 tsp dry mixed herbs
  • Salt and pepper
  • 30g butter, softened
  • Sliced Serrano/ Palma ham, 1 slice per chicken thigh (2 per breast)

Method:

  • Add the garlic and herbs to the butter and mix well
  • Open out the chicken, cut side up, on a board
  • Season the cut side of the chicken with salt and pepper
  • Spread an even layer of the butter on the cut side of the chicken

  • Fold the chicken, enclosing the butter inside
  • Place the chicken into the centre of a piece of ham with the opening at the bottom
  • Wrap the ham up and around the chicken- it will stick by itself and hold the butter in
  • Place the parcels onto a wire rack in a baking tray, this allows the heat to get around and crisp the ham at the bottom as well

  • Cook in a pre-heated oven at 200C for 15minutes (check it is cooked through before serving)
  • Serve with steamed veg
