Stir-fry’s are so quick and easy! Although, as the name suggests, the meal is fried, if you are using a non-stick frying pan, little oil is needed and the results are lean and healthy. This recipe uses rice noodles that are naturally gluten free but you could substitute with egg noodles (these take a little longer to cook) should you wish. Two portions of salmon are more than enough for three children in this recipe but as the salmon is chopped up, it can be stretched further by adding more veg.
Ingredients:
- Splash olive oil
- 1 small white onion, finely chopped
- 2 small cloves garlic, crushed or finely chopped
- Several florets broccoli, chopped into bite-sized pieces
- Handful french beans, topped, tailed and chopped into inch longs
- Handful shredded kale
- tsp Chinese 5 spice
- 1 tbsp teriyaki sauce
- 1 tbsp light soy sauce
- 1/4 cup water
- 2 portions of salmon chopped into bite-sized chunks
- 2 nests rice noodles for 3 children (if cooking for adults use a nest per person)
- 1 tbsp toasted sesame oil
Method:
- Fry off the onion in the olive oil until translucent
- Add the garlic and fry for a further minute
- Add the veg, chinese 5 spice and sauces, stir to coat
- Add the water and cover, leave on a low-medium heat for 8-10 minutes until the veg has softened slightly
- Bring a separate pan of water to a simmer ready for the noodles (follow guidance on the pack to cook)
- Add the salmon and stir every couple of minutes until it is cooked through (around 5-6 minutes)

- Drain the noodles and return to the pan with the sesame oil and toss to coat
- Serve the stir-fry on a bed of the noodles

Oh I wish I would have read this before making salmon the other night. I made mine with brown rice and the leftover veggies from the week. Still tasty but I will have to remember this recipe for next time. I love those thin noodles. Thanks for linking up with #momsterlink :))
